Our Story: Doing Justice to Vanilla
VanillaBros began as a lucky detour on a dirt road and turned into a full-blown obsession with the perfect bean.Back in 2018, we - brothers Lucas and Nigel - went to Madagascar for a regular trip. We were looking for good food and a change of scenery, nothing more. But while we were exploring the island,we happened to stop at a vanilla farm.The scent hit us first. It was heavy, sweet, and nothing like the "vanilla" we grew up with. Suddenly, we were looking at a finicky orchid that requires hand-pollination and months of patience.It turned out that real vanilla is a work of art, not just an ingredient.Seeing that level of precision gave us a massive respect for the spice.The farmers were incredibly patient with us, answering a million questions and sharing a piece of Godrogodro (this unreal, caramelized Malagasy coconut-vanilla cake).Everything clicked for us right then - we couldn't go back to supermarket vanilla after that.By the time we left, we’d made sure to bring a serious stash of the real stuff back home with us.
Not All Vanilla Is the Same
Back home,we started putting vanilla in everything. We were poaching fruit, making infusions, and experimenting with savory dishes.Our supply ran out fast, and the options available back home were underwhelming - dry, brittle, and smelling like a ghost of what we’d experienced.Nothing came close to the plump, oily beans we’d seen in Madagascar. We knew then that we wanted to bring that real experience home.We wanted people to taste vanilla in its true form.
Building VanillaBros
This couldn't just be about finding a better product, though. We wanted to support the people behind it.We needed a partnership where the growers felt truly appreciated, and where every step of the business reflected our respect for their labor.
Finding the right partner took over two years.We spent that time researching, testing, and vetting suppliers to make sure nothing was being rushed and that workers were treated fairly.We eventually found an incredible 94-hectare plantation that shared our obsession with quality and ethics.So, in 2021, we returned to Madagascar. We wanted to make sure the reality on the ground lived up to everything we’d been told. It more than delivered. Seeing their focus on traditional methods and that level of care was inspiring. The quality was exactly what we wanted for VanillaBros - it was a perfect match.
Our Roots in Madagascar
Vanilla is the second most expensive spice in the world and easily one of the most labor-intensive. We believe in transparency - you deserve to know the full story behind every bean we bring to your kitchen.
We’ve built a close-knit partnership with a single plantation in Madagascar, where one team oversees every detail of the traditional curing process. Together, we’ve replaced industry shortcuts with a standard of quality that prioritizes both the natural character of the bean and the community that grows it.
It Starts with the Soil
Our partner’s 94-hectare plantation is more than just a farm - it’s where they’ve spent years perfecting their craft. To maximize the bean's natural essence from the ground up, they developed a proprietary 5-ingredient compost - a specific blend of coconut husks, banana trees, ravenala, rice grass, and lychee leaves. This custom nutrition naturally boosts vanillin levels, producing the plump, oil-rich beans that define the VanillaBros standard.
Great Flavor Requires Patience
High-quality vanilla is the result of a meticulous, patient process where timing and temperature are everything. During our second visit to Madagascar, we toured countless farms, but this one stood out. The atmosphere of mutual respect and the level of surgical precision they applied to traditional methods was a revelation. Seeing it live made us realize that not all vanilla is the same - exceptional flavor only happens when you refuse to take compromises.
Your Vanilla's Journey
The Process
Hand-Pollination
Every single orchid is pollinated by hand using a tiny needle. Since each flower opens only once for a few hours in its life, the team must walk the plantation every morning to catch the daily bloom before it closes forever.
8-Month Harvest
We don’t harvest until the vines are truly ready. Every pod is hand-selected only at peak maturity — a slow, manual process that ensures the seeds are as dense and oil-rich as possible.
The "Kill" (Boiling)
To stop the beans from growing and lock in the flavor, they are dunked in hot water (145°F – 185°F) for a precise 60–180 seconds. One mistake here and the whole batch is ruined.
Sun Drying
For 60 days straight, the beans are carried out to the sun every morning and brought back in every night. They are hand-massaged and rotated daily to make sure they dry evenly without losing their natural oils.
Sorting & Traceability
Before shipping, every batch is tested and graded by hand. We assign a unique ID to track vanillin levels and moisture, making sure only the heavy, high-grade pods make the cut.
Sealing the Aroma
To ensure the Madagascar moisture stays intact, we vacuum-seal every batch immediately. This prevents the "ghost aroma" found in dry supermarket beans and keeps them as fresh and potent as the day they were cured.
