Split the bean lengthwise and scrape out the "caviar" (the seeds) to unlock the full flavor.

Absolutely. In fact, our beans are the 'gold standard' for DIY vanilla extract. Vacuum-sealed at the peak of their cure to lock in oils and vanillin, they infuse faster and produce a deeper, more complex extract than the dry, brittle pods found on most shelves.
The quality is in the "bend." A premium bean should be dark, oily, and flexible enough to wrap around your finger without snapping. If it’s brittle or has no scent, the essential oils have evaporated, and the flavor is gone.
Vanilla beans don’t "spoil," but they can lose their soul. Stored airtight in a cool, dark spot, they stay supple for up to 2 years. Brittle beans are still safe for extract; only toss them if you see actual fuzzy mold.
Keep your beans in their original vacuum-sealed packaging until you need them. Once opened, it’s best to move the remaining beans to an airtight glass jar and store them in a cool, dark cupboard (the secret is keeping that Madagascar humidity trapped inside the container). Never refrigerate them – the cold air will dry out the essential oils and kill the aroma.
