Classic Vanilla Cake

Ingredients

Cake

  • 2 ½ cups (315g) all-purpose flour
  • 2 ½ tsp baking powder
  • ½ tsp salt
  • 1 cup (230g) unsalted butter, room temperature
  • 1 ¾ cups (350g) granulated sugar
  • 4 large eggs, room temperature
  • 1 cup (240ml) whole milk
  • 1 vanilla bean (seeds + pod)

Vanilla Buttercream (optional)

  • 1 cup (230g) unsalted butter, room temperature
  • 3–4 cups powdered sugar
  • 2–3 tbsp milk or cream
  • Seeds from 1 vanilla bean

How to use real vanilla beans

  1. Split the vanilla bean lengthwise

  2. Scrape out the seeds (caviar)

  3. Add:

    • Seeds → directly into butter & sugar

    • Pod → infuse into warm milk

This gives a deeper, more natural vanilla flavor with beautiful specks throughout the cake.

Instructions

1. Prepare

  • Preheat oven to 180°C (350°F)

  • Grease and line your cake pan


2. Infuse the milk (optional but recommended)

  • Warm the milk gently (do not boil)

  • Add the vanilla pod

  • Let sit for 10–15 minutes, then remove


3. Mix dry ingredients

Whisk together:

  • Flour

  • Baking powder

  • Salt


4. Cream butter, sugar & vanilla

  • Beat butter and sugar for 3–5 minutes until light and fluffy

  • Add the vanilla bean seeds and mix


5. Add eggs

  • Add eggs one at a time

  • Mix well after each addition


6. Combine

  • Add dry ingredients in batches

  • Alternate with milk

Start and finish with dry ingredients

Mix just until combined (do not overmix)


7. Bake

  • Pour batter into prepared pan

  • Bake for 35–40 minutes, until golden and set


8. Cool & assemble

  • Cool completely on a rack

  • Slice horizontally into two layers

  • Add filling of choice (buttercream, whipped cream, or jam)

  • Frost the outside if desired


Vanilla Buttercream (optional)

  • 1 cup (230g) unsalted butter

  • 3–4 cups powdered sugar

  • 2–3 tbsp milk or cream

  • Seeds from 1 vanilla bean

Beat until smooth, light, and spreadable.


 Tips

  • Use room temperature ingredients for a smooth batter

  • Cream butter and sugar properly for a light texture

  • Don’t overmix once flour is added

  • Use high-quality vanilla for best flavor
